Instructions:
- Cook the noodles as per the packet instructions, drain and set aside.
- Meanwhile, place the stock, soy sauce, oyster sauce, chilli, lime leaves and ginger in a saucepan over medium heat and simmer for 5 minutes.
- Add the fish and cook for 2 minutes, or until the fish is tender and cooked through.
- To serve, pile the noodles into two serving bowls, top with the fish and ladle over the stock. Garnish with finely sliced spring onions.
