Instructions:
- Place the sweet potato into a saucepan, just cover with water and bring to the boil over high heat.
- Reduce the heat and simmer until soft and tender, about 8 minutes, then drain.
- Meanwhile, coat the salmon portions with the honey and season with the freshly ground black pepper.
- Heat a non-stick frying pan over high heat and cook the salmon for approximately 2 minutes each side, or until the honey is golden (the salmon should still be slightly pink in the centre).
- Add the coconut milk and chives to the drained sweet potato, and mash until well mixed.
- Transfer the salmon fillets onto two warmed serving plates and serve with the sweet potato mash on the side.
