French Toast with Orange Zest

Ingredients:

  • cooking oil spray
  • 14 grams vanilla whey protein powder
  • 2 medium egg whites, lightly beaten
  • ¼ cup skim milk
  • 1 tsp grated orange zest
  • 2 slices wholegrain bread
  • 60 mls pure Canadian maple syrup

Instructions:

  1. Heat a non-stick frying pan over medium-high heat with a few sprays of cooking oil spray.
  2. Meanwhile, whisk the protein powder, egg whites, skim milk and orange zest in a pie plate until smooth.
  3. Dip one slice of the wholegrain bread into the batter and allow to soak for about 10 seconds; turn over and repeat on the other side. Place the soaked bread into the frying pan and cook for about 3 minutes each side, until golden brown.
  4. Repeat with the second slice of bread.
  5. Place both slices of French toast onto a serving plate and pour the maple syrup over it.

Chef’s suggestions:

  • For a variation, replace the orange zest with 1 teaspoon ground cinnamon, 1 teaspoon nutmeg and 1 teaspoon vanilla essence.
  • For gluten-free, replace the wholegrain bread with gluten-free bread.
  • For dairy-free, replace the skim milk with non dairy milk alternative (soy, almond, coconut) and use a vegan protein powder instead of whey protein powder.
