Honey Seared Salmon with Sweet Potato Mash

Ingredients:

  • 2 medium sweet potatoes (approx 150 grams each), cut into 1 inch chunks
  • 2 salmon fillets (100 grams each)
  • 1 Tbsp honey
  • freshly ground black pepper
  • 90 mls reduced-fat coconut milk
  • 4 Tbsp chives, chopped

Instructions:

  1. Place the sweet potato into a saucepan, just cover with water and bring to the boil over high heat.
  2. Reduce the heat and simmer until soft and tender, about 8 minutes, then drain.
  3. Meanwhile, coat the salmon portions with the honey and season with the freshly ground black pepper.
  4. Heat a non-stick frying pan over high heat and cook the salmon for approximately 2 minutes each side, or until the honey is golden (the salmon should still be slightly pink in the centre).
  5. Add the coconut milk and chives to the drained sweet potato, and mash until well mixed.
  6. Transfer the salmon fillets onto two warmed serving plates and serve with the sweet potato mash on the side.
