Maple Syrup Bacon Crumpet

Ingredients:

  • cooking oil spray
  • 100 grams extra lean thin sliced back bacon
  • 1 wholemeal crumpet
  • ½ small banana
  • 15 mls pure Canadian maple syrup

Instructions:

  1. Heat a non-stick frying pan over medium-hot heat with a few sprays of cooking oil spray.
  2. Cut each rasher into 2–3 long strips and when the frying pan is hot, add the bacon in one layer.
  3. Cook until the underside is golden then turn the pieces over and cook on the other side.
  4. Slice the banana and toast the crumpet.
  5. When the bacon is cooked, push the pieces to the edges of the frying pan and add the banana to the centre. Drizzle with half the maple syrup and lower the heat.
  6. Cook for a minute until very lightly golden.
  7. Arrange the bacon and banana slices on the toasted crumpet and drizzle the remaining maple syrup over the top.

Chef’s suggestions:

  • It pays to invest in a really good quality heavy-based non-stick frying pan, which makes low-fat cooking much easier.
  • For gluten-free, replace the crumpet with gluten-free bread.
