Mixed Grain Swiss Muesli

Ingredients:

  • 15 grams malted wheat flakes
  • 15 grams rice flakes
  • 10 grams raisins
  • 5 grams flaked almonds
  • 1 tsp sunflower seeds
  • 100 mls skim milk
  • ½ medium orange
  • 50 mls low-fat natural bio yoghurt
  • 14 grams vanilla whey protein powder

Per serving: 300 calories; 48.5g carbohydrates; 25g protein; 5g fat; 4g fibre

Instructions:

  1.  Combine the wheat flakes, rice flakes, raisins, almonds and sunflower seeds in a bowl and pour the milk over; mix thoroughly, cover and leave in the refrigerator for 2 hours to overnight.
  2. When ready to eat, cut the orange into bite-sized chunks and arrange on the muesli.
  3. Mix the yoghurt thoroughly with the whey protein powder and spoon on top to serve.

Chef’s suggestions:

  • You can use any citrus fruit you like – pink grapefruit contains more anti-oxidants than ordinary yellow grapefruit or oranges, or mix a couple together for more variety.
  • For gluten-free, replace the wheat flakes with soy flakes.
  • For dairy-free, replace the skim milk and yoghurt with a non dairy alternatives, such as soy or coconut and use a vegan protein powder instead whey protein powder.
