Potato, Bacon and Tomato Skewer

Ingredients:

  • 125 grams new potatoes, cooked
  • 60 grams extra lean back bacon, all visible fat removed
  • 5 medium cherry tomatoes
  • cooking oil spray
  • freshly ground black pepper
  • lettuce or salad leaves, for garnish

Instructions:

  1. Preheat the grill.
  2. Cut the potato into large bite-sized chunks and cut the bacon into rectangles, then fold each rectangle in half.
  3. Arrange the bacon, potato and tomato evenly on a long metal skewer, spray liberally with cooking oil spray and grind a little pepper over.
  4. Put the skewer on the grill pan griddle and cook under the grill for approximately 3 minutes or until the potato is beginning to turn golden.
  5. Turn over and cook the other side for a further 3 minutes until the bacon is cooked through.
  6. Serve garnished with lettuce or salad leaves of choice.

Chef’s suggestions:

  • If you have no cherry tomatoes you can use two small to medium regular tomatoes and cut them in half.
