Instructions:
- Preheat the grill.
- Cut the potato into large bite-sized chunks and cut the bacon into rectangles, then fold each rectangle in half.
- Arrange the bacon, potato and tomato evenly on a long metal skewer, spray liberally with cooking oil spray and grind a little pepper over.
- Put the skewer on the grill pan griddle and cook under the grill for approximately 3 minutes or until the potato is beginning to turn golden.
- Turn over and cook the other side for a further 3 minutes until the bacon is cooked through.
- Serve garnished with lettuce or salad leaves of choice.
